THE MOST AMAZING INSTANT POT LOW CARB PIZZA CASSEROLE

Worried that living the low-carb lifestyle means that you’ll have to give up pizza for good? That’s just plain wrong! This Instant Pot Low Carb Pizza Casserole proves that you can easily maintain your diet and enjoy delicious flavors! 

Ingredients 
  • 1 teaspoon of freshly cracked Pepper
  • 1teaspoon of Sea Salt
  • 1 cup of shredded Mozzarella Cheese
  • 1 cup of shredded Cheddar Cheese
  • 1 lb. of ground Turkey
  • 1½ cups of soy-free Marinara or Pasta Sauce
  • 1 teaspoon of Garlic Powder
  • 1 teaspoon of Onion Powder
  • 1 teaspoon of Italian Seasoning
  • 1 (3 oz.) packet of sliced Pepperoni
  • 2 tablespoon of Olive Oil

Instructions 
  1. Turn your Instant Pot on sauté mode. Add olive oil to the Instant Pot insert. Once hot, add the ground turkey. Cook turkey thoroughly, breaking it with a spatula, until browned.
  2. Add the marinara sauce, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
  3. Keep cooking until the sauce has coated the browned turkey meat and there is no more liquid left in the pot.
  4. Take a 1-quart container that fits inside of an Instant Pot. We will be using the pot in pot (PIP) for this recipe.
  5. Place 1/3 of the cooked turkey in the bottom of the container. 
  6. Top with1/3 cup of cheddar and 1/3 cup of mozzarella cheese.
  7. Place the sliced pepperoni on top of the cheese layer.
  8. Repeat the same sequence of the layer twice.
  9. In the end, you will have 3 layers each of turkey meat, cheese, and pepperoni.
  10. Meanwhile, rinse out your Instant Pot insert with hot water, so that it doesn’t set off any ‘Burn’ warning when we use the “Pressure Cook” setting. 
  11. Place 2 cups of water into Instant Pot insert. Place the trivet at the base of your Instant Pot insert. Put the 1-quart container on the trivet. Place a piece of foil on top to stop any liquids from falling into casserole.
  12. Put the lid on, making sure that the pressure valve is in the “Sealing” position.
  13. Select the “Pressure Cook” mode. Adjust the ‘Pressure Level’ to “high” and adjust the time, with the “- / +” to 20 minutes.
  14. When Instant Pot beeps, let the pressure release the natural way for 15 minutes and then using the spoon that comes with the instant pot, turn the pressure valve to the “Venting” position to do the quick release.
  15. Remove lid and the foil. Allow to cool for a few minutes before carefully taking out the trivet. Wear oven mitts to be safe.
  16. Let the pizza casserole cool for 15 minutes to settle before cutting and serving
